I've decided to try something new here at AP Tuesdays.  I feel myself getting behind on this house of mine, so each week I am going to focus in on a different area (zone) and write some goals here at AP Tuesday. You can all hold me accountable!:)  Here are my goals for this week...want to join me?

One Thousand Gifts: A Dare to Live Fully Right Where You Are

~ 3 year old Lottie.  Her sweet but fighting spirit.  The gift of seeing her in person.  Her hug that brought such emotions of thankfulness for life, hers and mine.  Those new red curls of hers!!

~ a step family that treats me like the same blood runs through our veins.  Such love and acceptance..it is overwhelming.  So thankful to be included in the tradition of yearly Branson trips.

~Snickerdoodle Rum Chata enjoyed with Snickerdoodle cookies.  The laughs and bonding that come with it.

~being stuck in a car with those I love for a full 2 days.  Love road trips!

~cash handed to me by my dad as we left.  The freedom and fun it gave the whole trip.

~the generosity of others...meals paid for.  Thank you, Pam!  Thank you, Grandma!  Thanks for the Calamari appetizer, Valerie!

~time at Grandmas house.  The memories it stirs of Grandpa.  The blessing of him and his example to us.  I miss you, Gpa!!

Raw, Healthy Chocolate Chip Cookie Bites


These Chocolate Chip Cookie Bites were a snap to make!  Dump ingredients into the food processor, roll into balls and in minutes you have a healthy, sweet treat.  These are nutty, wholesome and have a touch of sweetness from the dates.  Do not let the dates turn you away. I am not a date lover, but in these treats they add a great sweetness that does not taste like dates, and will not give you a sugar high.  They do not taste like chocolate chip cookie dough, but are filling, wholesome and delish!



Raw, Healthy Chocolate Chip Cookie Bites

2/3 cup cashews
1/2 cup + 1 tbsp regular oats
3/4 cup whole wheat flour (or spelt flour or any flour)
1 tsp kosher salt
5 pitted medjool dates, chopped
1 tsp. pure vanilla extract
3-5 tbsp pure maple syrup, to taste
3-4 tbsp dark chocolate, chopped

(for true raw foodies, here is a recipe for homemade raw chocolate}

Directions: Line a baking sheet with parchment paper or a non stick mat. In a food processor, process the cashews and oats until a fine crumble (see picture below). Now add in the flour, kosher salt, and roughly chopped pitted medjool dates. Process until fine.
Add in the vanilla and pure maple syrup and process until the mixture comes together in a ball.
Transfer to a large bowl and stir in the 3-4 tbsp of chopped dark chocolate. Roll into balls

For My 3 Lil' Lovlies






My babies are now 12, 10 and 9!  I just can't believe it!  Where do the years go?  I am loving every minute of being a mom.  I feel so very lucky to call these little lovelies mine, always remembering that they ultimately are His.  I know He will always take care of them.

Health Update



Nothing too exciting, just wanted to update you all after writing about my stomach scans at this post.

I had an ultrasound of my stomach and they found no gallstones large enough to show up.  I was scheduled for a stomach scan to rule out metastasis, but I cancelled it.  My stomach pain has gone away, and I did not want to add to our medical bills with another scan.  I have a full set of scans coming up at the end of the year, so as long as I am pain free, I will wait for those.

I still do think it was gallbladder related.  I have been taking steps to flush the gallbladder naturally and I no longer feel any discomfort or pain.
