I know, I know. This is not the usual type of recipe I post here at New Nostalgia. There is nothing real or healthy about these--AT ALL! But, sometimes you gotta break the healthy rules and make something junky--especially when it is for a dessert contest! City Impact (where my husband works) was having their annual BBQ Cookout, and something they do every year is a fun dessert contest. The winners get great gift cards, so I decided to enter something extra gooey sweet! I didn't win, but it was fun anyway.
I started making this recipe about 4 years ago, always in the fall during football season and only once a year. I put candy corn in it instead of the chocolate candies, which really is the perfect salty/ sweet combination, inspired by the typical peanuts and candy corn mix. It looks very fall and festive.
While munching away on these Funky Fritos, my daughter asked me what was in them. I started listing the 4 ingredients, and when I got to corn syrup, she had a freak out and said "oh man, Mom, I CAN'T BELIEVE you made something with CORN SYRUP in it." My husband smiled, shook his head and said "only YOUR daughter would say something like that!" :)
1 cup white corn syrup
1 cup white sugar
1 cup peanut butter
Pour out the Fritos on a large shallow pan lined with wax paper. Combine the corn syrup and sugar and bring to a boil (I use my microwave for this kind of chore - usually takes about 6-8 minutes for the sugar to be dissolved and you're set!) Then stir in the PB til smooth. Pour the mixture over the chips, sprinkle with candies, and chill for about 30-60 minutes. Break apart and enjoy!




Haha! That totally cracks me up about what you daughter said about corn syrup. I was laughing out loud! Good job. :)

ReplyDeleteI thought this sounded absolutely disgusting, but a friend of mine had it at a Halloween Party & she used melted chocolate chips drizzled over top. I was brave enough to try it & it was delicious!! So addicting!! Her mother-in-law actually made it so she didn't have the recipe so I am so glad I ran across this page, I am going to make it for Thanksgiving & probably Christmas too.

ReplyDeleteI melt chocolate chips and put a little oil in them. I can then drizzle the chocolate over mine! LOVE THEM!!!
ReplyDeleteTastes yummy!! BUT... Next time I will use wax paper, not foil... I had a heck of a time peeling the foil off and a lot of it I had to throw away because foil was stuck to it : ( Did you ever have this problem? Why would you use foil instead of wax paper?
ReplyDeletewe never had trouble with it sticking to foil, but I changed it to wax paper just in case. It may have to do with how long the caramel mixture is cooked...ours are usually pretty gooey and come right off the foil, but if cooked longer, they set up more and I could see them sticking. Sorry for your trouble, glad you liked the recipe despite!
